No-one visiting Maastricht can say no to a slice of flan. It tastes best at De Bisschopsmolen, the oldest watermill in the Netherlands still in operation. They have their own bakery where they bake spelt bread.
You can witness with your own eyes the genuine craft of baking spelt bread at De Bisschopsmolen. First, the watermill, driven by the River Jeker, slowly grinds the grain into the flour that is used in the bakery. Then the baker gets down to business. Meanwhile you can taste the finished product in the taproom: spelt bread and spelt flan. You can also opt for a guided tour of De Bisschopsmolen or follow a bread or flan baking workshop.
